Kitchen epoxy flooring gets hit with water near boiling point, then cooled again. Standard epoxy has a lower heat tolerance than most people expect, and thermal shock from a wash-down cycle is what makes it debond from the slab in sheets.

Urethane cement handles the temperature swing, resists the lactic, citric and acetic acids that come out of food production, and keeps its grip when the floor is wet and greasy. It costs more per square foot and it is the right answer in these rooms.

Coving, Drainage And The Details That Pass Inspection

The epoxy flooring is carried up the wall as a coved fillet so there is no square internal corner for water and residue to collect in. That single detail is what makes a room genuinely washable.

Falls are set toward the drains so water leaves rather than ponding, and the system is carried into the drain body itself. Around equipment plinths and legs the floor is sealed rather than butted, because an open joint under a fryer is where a problem starts.

Grip When The Floor Is Wet And Greasy

Commercial kitchen epoxy flooring is wet, hot and greasy for most of a shift, and staff move quickly across it carrying things. Aggregate is built into the finish at a level set against that, and against how the floor is cleaned.

There is a balance to strike. Enough texture to be safe underfoot, not so much that grease lodges in it and the floor becomes difficult to clean, which defeats the purpose.
